To celebrate our best vintages we decide to release a Brunello di Montalcino Riserva, we will issue this wine only in the best vintage with special numbered labels.
All the vinification process of this great wine, even the malolactic fermentation, take place in small concrete vats.
The best grapes coming from our oldest vineyard of 1984, are picked and selected by hand in small cases and after a soft press vinificated with a cold pre-fermentation and a long maceration with frequent pumping over and delestage, looking for the best extraction for an harmonious texture and a great complexity. After the malolactic fermentation the wine starts the ageing phase in wood, for 24 months in french wood specially selected.
Another year in concrete vats complete the ageing process and without any filtration but just with a static settling the wine is bottled and starts a long bottle ageing.
The Riserva 2007 is the first of a series of wine created to celebrate not just a vintage but our vintage!
The Brunello di Montalcino is produced only with grapes coming from the oldest vineyards. Its color is intense ruby and the aromas are of mature fruits, sustained in the palate by great complexity. The tannins are noteworthy, silky and oily, persistent. A wine of optimal equilibrium, elegance and complexity, it will increase its bouquet after a moderate time in bottle.
These are great with well structured and composite dishes such as red meats, game maybe accompanied by mushrooms and truffles. A good match could be with seasoned cheeses too.
